I tried my hand at using and sharpening a tanaka deba. Without much skill I ruined a few trout then I tried sharpening and ruined the edge too. Greg did an amazing job, fixed the ura, the edge is scary sharp (I tested it on a few blacktail tuna) and made a truly beautiful polished blade and handle. Greg has done an amazing job repairing/resurrecting our small Ajikiri knife - see his blog for pictures of the impossible job. It's fair to say that it is a better knife than when we bought it. Greg was also very good to deal with - he communicated throughout the process, so I always knew where we stood, especially as it was touch and go whether it was actually reparable. Greg did an awesome job rehandling and etching my already thinned out Hiromoto AS Yo-Gyuto. Fit & Finish of the handle is very good and thanks to its coke bottle-shape, the handle sits in the hand very solid. Also the etching looks pretty good just like I imagined when I first bought my Hiromoto.
You are dealing with a true craftsman. Like in the previous reviews someone who is truly passionate about his work. Communication was fantastic. My knives came back better than ever. I can't recommend Greg enough. I will be sending my knives once a year to get sharpened.
Greg did an absolutely great job on thinning and re-finishing my Carter kurouchi funayuki, as well as sharpening and re-finishing my Shigefusa Honesuki which now look like new. The Carter now cuts better than new - it is a joy to use it. Greg is also very nice to deal with and gets my full recommendation.
